Paleo friendly zucchini “spaghetti”
I’ve had a few requests to post the recipe for the zucchini spaghetti that is on the nutrition page.
I didn’t follow a recipe to make it, I just winged it, much like I do with most of the meals I eat. Or my girlfriend makes them… she’s awesome!
Anyways, I’ve found a few recipes online, google is pretty sweet for this BTW, y’all should try it sometime! All joking aside, get yourself some ground beef, bison,orĀ buffalo, grass fed is better but I know it’s more expensive and can’t always be found. Get yourself some zucchini and some fresh tomatoes or tomato paste for the sauce, garlic, olive oil, oregano, salt, pepper, and some other herbs will do, sometimes you can find the “italian herb mix” it’s basically basil, thyme, and some oregano.
Start by slicing the zucchini into thin strips to give it that spaghetti look and feel, you’ll want to cook that in a pan for 10 minutes or so with some olive oil at medium heat, you can add some garlic and onions to that if you like, or just add all that stuff to the sauce which you should be cooking in a separate pan.
With the ground meat, just throw it in a pan and start cooking it, spice it up with the various spices I mentioned previously, once the meat is almost cooked start adding the sauce stuff, tomatoes, onions, garlic, etc. Let it simmer at low heat for a bit until the onions and stuff cooks down a bit and once it’s ready, add that to your zucchini and voila, you’ve got yourself a great paleo meal!
